Method
- Add the lemon juice and salt to the small bowl and give everything a quick stir. Let sit a few mins - while you slice the mushrooms.

- Clean the mushrooms and chop off the end of the stems. Using a mandolin, slice the mushrooms into thin slices. Place in medium size serving bowl and set aside.

- Add the green onion, lemon juice and salt to the bowl of mushrooms. Add the olive oil and stir.

- Let sit for approx. 10 minutes before serving. Enjoy!
