Mushroom Salad

A refreshing, clean, and tasteful salad - bring it to your next summer picnic.

Ingredients
  

  • 1/2 lb whole mushrooms (baby bella or white)
  • 1/4 cup green onion
  • 4 tsp lemon juice
  • 1/2 tsp salt
  • 4 tbsp olive oil

Method
 

  1. Add the lemon juice and salt to the small bowl and give everything a quick stir. Let sit a few mins - while you slice the mushrooms.
  2. Clean the mushrooms and chop off the end of the stems. Using a mandolin, slice the mushrooms into thin slices. Place in medium size serving bowl and set aside.
  3. Add the green onion, lemon juice and salt to the bowl of mushrooms. Add the olive oil and stir.

  4. Let sit for approx. 10 minutes before serving. Enjoy!
