Grilled Halloumi Burger

Ingredients
  

  • 1 block halloumi cheese
  • 2 portobello mushrooms
  • 2 brioche buns
  • 3 tbsp olive oil
  • freshly ground salt and pepper

Method
 

  1. Cut the halloumi block in half.
  2. Coat halloumi slices and Portobello mushrooms in olive oil, salt and pepper.
  3. Heat grill to high heat – about 450 degrees.
  4. Place halloumi slices and Portobello mushrooms on the grill. Grill for 2-3 minutes on each side.
  5. Meanwhile, lightly toast brioche buns.
  6. Assemble halloumi and mushrooms on burger.
  7. Enjoy!
