Rich Man’s Twix

This decadent, layered dessert features a buttery shortbread base, a silky caramel, and a top layer of chocolate ganache.

Ingredients
  

Shortbread Crust
  • 2 1/2 cups cups flour
  • 2/3 cup powdered sugar
  • 1/2 tsp salt
  • 12 tbsp unsalted butter
Caramel Layer
  • 1 14- oz can sweetened condensed milk
  • 1/2 cup unsalted butter cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup dark corn syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt
Chocolate Layer
  • 3/4 cup semisweet chocolate chips
  • 40 ml heavy cream
  • Pinch of sea salt

Method
 

  1. Preheat oven to 350F and line a 9×9 inch baking dish with parchment paper
Shortbread Crust
  1. For the shortbread crust: Sift the flour into a large bowl. Then, sift in the powdered sugar and salt. Whisk together. Melt the butter and combine it in the bowl until crumbly.
  2. Pour in the crumble mixture into the lined baking dish. Pat down the mixture with your hands. Bake for 20 minutes or until it is a light golden brown. Set aside to cool.
Caramel Layer
  1. In a saucepan, combine the butter, brown sugar, salt, vanilla, sweetened condensed milk and corn syrup.
  2. Place the saucepan over medium heat and whisk until melted and combined. Continue whisking over the heat while the caramel bubbles and darkens to a richer color. DO NOT stop whisking until the caramel is ready (~5 mins). The caramel is ready once it reaches 225F and starts to thicken and pull away from the edges. Remove from heat.
  3. Pour the caramel layer over the shortbread crust and smooth to create a flat layer. Let chill until caramel sets (~10 mins).
Chocolate Layer
  1. Chop chocolate and melt with cream either in a double boiler or microwaving in 15-30 second intervals, stirring in between. Pour the chocolate over the caramel and smooth into an even layer. Sprinkle with sea salt and let chill.
  2. Cut into small rectangles to serve. Enjoy!
